Snickerdoodle Spritz Cookies, pg 54 (My notes in parentheses)
1 cup powdered sugar
1 cup butter, softened
1 tsp vanilla extract (I didn’t have any vanilla extract, so I used almond extract instead!)
1 large egg
2 cups flour
1/2 tsp table salt (I felt like this recipe turned out a bit salty, so either use less or use kosher salt/big chunk sea salt, or try it as is and see what you think!)
1/4 cup granulated sugar
1 tbsp ground cinnamon

Preheat oven to 375°F. Beat the powdered sugar and butter in a mixer until light and fluffy. Add vanilla and egg; beat until blended. Add the flour and salt; beat until blended.

Fit cookie press with a cute template. Press the dough onto an ungreased baking sheet (no parchment paper). Stir together cinnamon and granulated sugar and sprinkle onto cookies (I tossed the cookies in this mixture after they were baked).

Bake for 7 to 9 minutes or until the edges are light golden. Cool on baking sheets then transfer to rack to cool completely. (My little tip, if you have trouble burning the bottoms of your cookies, double up the cookie sheet, you can almost always avoid burning them this way.)
